White Beans And Peanut Powder Are The Latest High-Fiber Food Hack

A new social media trend called “beanut butter” has people combining white beans with peanut powder to make a creamy spread that tastes surprisingly peanut buttery while sneaking some extra fiber into the mix.

The idea started making the rounds after fitness influencer Chris Sanford shared what he calls his “ultimate fiber hack.” That could be useful considering a 2016 study found that only about 5% of Americans were getting the recommended amount of fiber each day.

Making it is pretty simple:

  • Drain and rinse a can of white beans, like Baby Limas or Great Northern beans.
  • Blend them with several spoonfuls of peanut powder until smooth.
  • Add more peanut powder and honey or maple syrup to taste.
  • Thin it with a little applesauce or water if needed.
  • Add cinnamon or cocoa powder if you want to dress it up.

And yes, apparently it actually tastes good. Taste testers say the finished spread was creamy, rich and mostly peanut-flavored, although there was still a faint hint of beans lurking in the background.

Will beanut butter replace the real thing? Probably not. But beans and peanuts are already a pretty solid plant-based pairing, and any trend that manages to make eating more fiber sound like a snack rather than a chore deserves a little credit.
