A public health advocacy group is urging three egg companies to rethink a planned donation of 53 million eggs and give away plant-based egg alternatives instead. The donation is part of a settlement tied to an alleged price-fixing scheme involving Hickman’s Egg Ranch, Cal-Maine Foods and Versova. The Physicians Committee for Responsible Medicine argues that mung bean- and chickpea-based egg substitutes can provide protein and fiber without cholesterol, and points to other plant-based breakfast options for people avoiding eggs. The group also cites research linking plant-based diets with benefits for heart health, diabetes prevention and weight management.
